Quest for the perfect breakfast bowl = Complete!!

Cash is a pretty huge fan of Waffle House. I know. I'd rather have a lovely brioche french toast, traditional eggs benedict, or for that matter, any kind of eggs benedict....but what can I say? He's 8. And I'm not going to turn my nose up at some perfectly crisped hashbrowns. 

Every time we go, he has their breakfast bowl, and gives it his own spin with some special condiments. I've tried (in vain) to recreate it at home for him, and every single time our hashbrowns came out too crispy or too soggy, and it ruined the whole thing. This week...we finally perfected it, and it's pretty stinking good. So I give you...Cash's famous breakfast bowl.

Ingredients

(serves two, with some leftovers for the dog):

  1. Potatoes (3-4 medium)

  2. Breakfast Sausage (half a package)

  3. Shredded Cheese (to taste, but we use about a cup of mild cheddar)

  4. Eggs (to taste, we use 3)

  5. Vegetable Oil (3T)

  6. Lawry's Seasoned Salt (or any salt)

  7. Pepper

  8. Cheesecloth (paper towels would also work in a pinch)

Peel and shred the potatoes. Use the largest grater you have.

Wrap the potatoes in cheesecloth and find a handsome man to squeeze all the liquid out that you can. Unwrap them, and then lay them flat on a microwave safe plate. We do these in batches of two. It's amazing how much water (?) comes out!

Put the potatoes in the microwave, and cook them for 2 minutes. Leave them in there to sit while you work on the toppings.

Brown the sausage in a nonstick pan.

Crack and beat three eggs, adding a little salt and pepper. Find that handsome guy again and let him do this part while you're cooking the sausage so it's all ready around the same time.

Once the sausage is done, take it out of the pan, and let it drain on a paper towel. Pour the eggs right into the pan and scramble them.

Put the sausage, eggs and cheese in a big bowl and let your helper mix them all together. Wipe out your nonstick pan, and pour in about 3T of vegetable oil. Let it get nice and hot.

Salt and pepper the potatoes, and slide them into the pan. It should sizzle immediately. Flatten them with your spatula, and cook for two minutes, then flip.  Cook for another two to three minutes. You want them to turn a light brown. Slide them out onto a paper towel when you're done to drain some of the oil off.

Split the hashbrowns between two bowls, and pour the sausage/egg/cheese mix on top.

It's time for Cash's special toppings!! Drizzle a little ketchup and a little syrup on the top. Mmmmmmm. You're all done, enjoy!!
